Twisted Biscuit Brunch Co. is now open in the old EdgeWild space in Edwardsville
Twisted Biscuit Brunch Co., a new breakfast, brunch and lunch concept, opened in Edwardsville in mid-June. The restaurant has taken over the former EdgeWild space at 1071 S. State Hwy. 157, creating a “polished, casual” brunch spot.
Jason Coalter, owner of JS Coalter & Associates, an investment and development company, has partnered with Michael Hussey, director of operations and executive chef, and Twisted Biscuit president Matthew Fox to execute the new concept.
“We just thought that this was a great opportunity for us to launch something new and different in a market that seems really well suited to the high-end, innovative, fresh brunch concepts that we want to offer,” said Pam Ogles, director of strategic development at JS Coalter & Associates.
The name is a perfect representation of the menu. “We’ve taken the traditional breakfast, brunch items and offered our unique twist on them,” Hussey said.
There are a number of unique biscuits, including one filled with fig, goat cheese, rosemary and almonds and served with almond cream dipping sauce; and another filled with sweet bacon jam and served with bourbon-maple dipping sauce. Other items include a St. Louis slinger and a pork chop with poached eggs on a cornbread waffle, as well as a variety of Benedicts, omelettes, sandwiches, pancakes and much more.
The restaurant also has a full bar. Just like the food menu, the beverage menu also offers a spin on traditional options, with several variations of bloody marys, including one with bacon-infused vodka and another with Irish whiskey.
The 5,500-square-foot restaurant seats about 280 people inside and an additional 40 to 50 people on the patio. The renovated space features bright, citrus colors and some whitewashed wood with bold, modern touches including the lighting and furnishes. The owners hope to expand the brand to new locations once things get settled in Edwardsville.
Twisted Biscuit opens daily at 7 a.m. and closes around 2 p.m.
