Soulard Gyro is opening a location in Maryland Heights in March

Soulard Gyro will open its fourth location in the St. Louis metro area at 12205 Dorsett Road in Maryland Heights in March. The 1,400-square-foot restaurant will open for lunch and dinner, with space to seat 20 to 25 customers.

Soulard Gyro owner Vedad Becirovic said he expects the new restaurant, which will be operated under a franchise agreement, to be a popular addition to the neighborhood. “It’s industrial, but there’s also a lot of residential around there, so we might have a good lunch and dinner crowd there,” Becirovic said.

The menu will include the same gyros, chicken doner kebabs and salads that are offered at Soulard Gyro’s other locations (Soulard, O’Fallon and Wentzville). However, Becirovic said the Maryland Heights restaurant will be the first location to feature a new range of premium meats, including hand-stacked chicken, lamb and beef.

Becirovic said his goal is to offer an upgraded product that is closer the flavor of gyros and kebobs served in shops in Germany, where he grew up. “It’s hand-stacked chicken, its premium cuts of lamb and beef with no fillers in it,” he said. “The spice mixture we use is going to mimic the stuff you get in Europe, in Greece and Germany.” The new meats will be introduced at the other Soulard Gyro locations within a few weeks of the Maryland Heights store’s launch.   

Becirovic said there are already plans for another franchise store in the St. Louis region, and potentially further expansion beyond that. “We have some exciting things happening,” he said.
