Chirco’s Pizza will open in Chesterfield later this spring

Chesterfield pizza lovers will have something to celebrate when Vito Chirco’s new pizza concept, Chirco's Pizza, opens at 14870 Clayton Road later this spring, as reported St. Louis Magazine. “It felt right. It was right in front of the old restaurant [Chirco’s Italian Restaurant],” Chirco explained. “It was previously Mario’s Pizza at that location, and then Pi 2 Go, which ran there for a few years.” He added that at 1,000 square feet, it’s strictly a carryout location.

For Chirco, a carryout concept feels just fine – he’s just happy to be making pizza again. “For right now, we’re going to do thin crust pizza. Eventually, we’ll introduce hand-tossed pizzas, maybe Sicilian,” he explained. “Thin and crispy pizza is what we’re known for.” On that note, he said retail salad dressing and tomato sauce will hearken back to the old days of his previous restaurant; lasagna that’s “like a brick” will also be on the menu. Chirco said he’ll be doing a collaborative barbecue pizza with Adam’s Smokehouse, and that he'd like to find a partner for an Asian-style pizza. A baked potato will be available, as will monthly specials.

At first, Chirco’s Pizza won’t sell alcohol, but might eventually when it’s better staffed. They’ll offer delivery and online ordering. Chirco’s will be closed Monday, and open Tuesday through Friday from 11 a.m. to 2 p.m. for lunch; 4 to 9 p.m. Tuesday through Thursday for dinner; 4 to 10 p.m. on Friday; noon to 10 p.m. on Saturday; and 4 to 9 p.m. on Sunday.
