The Scoop: Waterloo, Illinois makes way for a second craft brewery, Hopskeller

070915_hopskeller     The residents of Waterloo, Illinois are a thirsty bunch. Renovations are underway at 116 E. Third St., to make way for Hopskeller Brewing Co., the second craft brewery to make its home in this Illinois community. The brewery is expected to open in October or November. Stubborn German Brewing also recently announced it would open in Waterloo next year. Hopskeller brewmaster and co-owner Matt Schweizer knows the community is eager for local craft beer; Waterloo Mayor Tom Smith approached him about starting a brewery in the area. Schweizer, who was a homebrewer and high school history teacher before embracing beer full time, joined seven other local investors in the new venture. “The city has been nothing but helpful,” Schweizer said. “They really want to see this go in. Regular people have been really supportive, too, offering whatever they can to make this go a little smoother. It really feels like a community effort.” Schweizer is currently refurbishing a historic 1850s home to serve as his seven-barrel brewery. The space will also seat 120 in a tasting room that will offer a full bar and Illinois wines, besides Hopskeller beer. While pub snacks will be available, Schweizer said patrons are encouraged to order delivery from Waterloo eateries. Hopskeller will launch with six beers, primarily focused on Northwest coast American ales and English ales. Look for American IPA featuring Northwest hops, a dry-hopped blonde ale, an American-style amber and a northern English brown ale, as well as two rotating seasonals. He hopes to start brewing at 350 barrels a year with bottling and distribution soon to follow.
