Inspired by the restaurant’s wine and vermouth menus, it’s made with whichever Spanish red needs to be used up, vermouth and a sherry-like white wine. These ingredients’ strong, complex flavors add a fermented note that balances the sweetness from passion fruit puree and Spanish orange liqueur. The drink arrives in a glass lined with orange slices and filled to the brim with crushed ice; with the ruby backdrop, it’s as pretty as a stained-glass window. Garnished with fresh gooseberries, it’s the finest, most unique sangria we’ve ever had.
