First Look: Timothy's The Restaurant in Creve Coeur

This week, Creve Coeur will have a new restaurant to its name when Timothy’s The Restaurant opens on Friday, Aug. 6, at 12710 Olive Blvd., in the space previously occupied by the Olive Street Cafe. Co-owned by Tim Metz and Sean Olson – also the owners of Pickles Deli – Timothy’s will see the restaurateurs stepping into their first fine dining brick-and-mortar; the beverage program will be run by Steven Manns, previously of Herbie’s and Akar.

“It was all Steven’s idea. I blame it on him,” Metz said, laughing; Metz added that he himself has been an avid home chef for many years and was excited to develop this menu. Once Metz and Olson had their concept, they waited to find the perfect location. “This was the right space. It’s a great area,” Metz said.

The menu features salads like a grilled Caesar with charred romaine, a roasted beet salad and a Brussels sprouts salad, as well as starters like a curried mussels set. Metz originally conceived of the menu as “elevated comfort food,” and dishes on the menu like the lobster pot pie, truffle mac and cheese, rustic-style ratatouille, and a signature burger definitely land in that vibe; a filet of sirloin, grilled salmon, scallops and a chicken breast with mushroom jus are also on the books. For dessert, customers can expect dishes like carrot cake fritters, Key lime creme brulee and a bourbon-vanilla cream bread pudding topped with bacon. “I love our dessert menu,” Metz said.
