Root Vegetable Chocolate Chili

Ingredients

1 Tbsp. olive oil
1 medium onion, chopped
1 orange bell pepper, chopped
3 cloves garlic, diced
½ tsp. red pepper flakes
1 Tbsp. chili powder
½ tsp. ground cinnamon
¾ tsp. salt, plus more to taste
2 tsp. cumin
2 tsp. ground coriander
2 tsp. dried oregano
6 cups vegetable broth
1 cup green lentils, washed
1 15-oz. can diced tomatoes
2 lbs. root vegetables, chopped (such as carrots and sweet potatoes)
1½ oz. semisweet chocolate (about ¼ cup)
Freshly ground black pepper to taste
Cornbread for servings


Preparation

• Heat the oil in a Dutch oven or large pot over medium heat. Add the onion and bell pepper and saute until the onion is translucent. Stir in the garlic, crushed red pepper flakes, chili powder, cinnamon, salt, cumin, coriander and oregano and saute until fragrant, about 30 seconds.

• Add the vegetable broth, lentils, tomatoes and root vegetables. Bring to a boil and then reduce heat to a simmer. Cover the Dutch oven and cook for 45 minutes.

• Stir in the chocolate, until melted. Season with salt and pepper to taste.

• Serve over cornbread.
