Day-Old Bread Soup
Sometimes the twist tie just didn’t get twisted tightly. Sometimes last night’s dinner party involved a bit too much wine and not enough bread. In any case, don’t dismiss the value of day-old bread. This artisanal treasure can be turned into a number of sweet and savory dishes that may actually (dare we say) be better than the loaf itself.
Ingredients
2 slices day-old bread¼ to ½ cup Mozzarella, fontina or Monterey Jack cheese
1 cup hot chicken or beef broth
Parmesan cheese for garnish
Preparation
• Place the bread in the bottom of a large soup bowl.
• Cover each slice with 1 cup of whichever cheese you have on hand.
• Pour the broth over the bowl and sprinkle with the Parmesan cheese.
