Peach-apple Salsa

This salsa is sweet, spicy, cool and refreshing. It‘s perfect on grilled pork, chicken, shrimp or fish ... even grilled tofu or tempeh. And it‘s incredibly easy to make, so you can spend your summer evening somewhere other than in the kitchen.


3 ripe peaches, chopped
1 Granny Smith apple, chopped
1 jalapeño, diced (more if you like your salsa really spicy)
½ red onion, diced
Juice of ½ lime, or more to taste
¾ cup chopped cilantro
Salt and freshly ground pepper to taste


• Mix all of the ingredients together in a large bowl. Allow the salsa to sit for at least 45 minutes, if not longer, to allow the fruit to break down and release some of its juice.
